Treated well, good wood outlasts everything else in the kitchen:

• Hand wash only in warm water with mild dish soap.
• Never put it in the dishwasher — heat and prolonged water will crack and warp the timber.
• Do not soak or leave it sitting in water.
• Dry immediately with a towel, then let it air dry fully before storing.
• Oil regularly — rub in food-grade mineral oil every few weeks, or whenever the wood looks dry or pale.
• Do not microwave and keep it away from direct heat sources.
• Sand out rough patches with fine sandpaper if the grain lifts, then re-oil.

Wood that is dried promptly and oiled occasionally will last for years. Wood left wet will not.
