To keep your board flat, sealed and food safe:

• Hand wash only in warm water with mild dish soap, straight after use.
• Never put it in the dishwasher — it will split the board.
• Do not soak or leave it lying in a wet sink.
• Dry both sides with a towel, then stand it on edge to air dry so both faces dry evenly.
• Oil monthly with food-grade mineral oil to stop it drying out and cracking.
• Use both faces — alternating sides keeps the board from bowing.
• Sand out deep cuts with fine sandpaper, then re-oil.

A board dried on its edge rather than lying flat will stay true far longer.
